Overjoyed!

This last week was so busy! On Tuesday we started packing up all our things to move out of our old, moldy, not so nice apartment and into our new, bigger and soo very nice apartment! It took us all of Tues. Wed. and Thursday night until 12:30am to get everything out of our old one and into our new one! I am now pleased to say, we are all moved in and almost all unpacked! We absolutely love our new place! Here's a few pictures of our apartment from the website:


We have a long way to go before it looks furnished like those pictures but we are well on our way to making it like a home. One of the things we did right away was buy a sofa and a love seat. For those of you that have been to our old apartment, know that our old sofa was, sad to say, not a sofa at all! But a love seat! It was so small and resembled that of a child couch. Small even for a love seat. Well, we have gotten rid of that little thing and graduated to bigger and better things. This is our new sofa and love seat!

I love it so much! Don't care for the accent pillows that came with it, but I will be replacing those soon with new colored ones.

The Lord has blessed us so much this year. This apartment was totally from the Lord! We had been praying and praying that the Lord would give us a great deal on it and He did! He did better then we could of ever imagined. We were praying that the Lord would give it to us at a certain price and He gave it to us way less then what we were even asking! I love how He always provides for our every need.

Another way that He provided last week was He brought someone to buy my broken down car! Earlier in the week we had someone inquiring about it and Thursday night we were praying that we would be able to sell it by this weekend. It has been sitting in my parents front yard for 7 months now and we both really wanted to just get rid of it. So Friday morning I get a call from my dad saying that the guy who is doing the granite for the bathrooms wants to buy it. A totally different guy then the one inquiring about it earlier in the week. So we drove down to my parents with the keys, he looks at it and says he wants to buy it! Thank you Lord! We had just prayed the night before and sold it the next morning! Wow! And if that's not enough. My birthday was last Sunday and I got a very generous gift from my new grandma (Daniels grandma). Praise the Lord for that! We can now buy some very needed furniture for our new place! And because I have such wonderful family and friends, I had a very memorable birthday weekend! Not to mention a wonderful husband who took me shopping and to have sushi for dinner!

Yet again the Lord has provided so abundantly for me. He has given me a new home, money to furnish it, wonderful family and friends and an amazing husband. I owe all I have to the Lord. I am so grateful to Him for all He does for me.

Quick and Easy Huevos Rancheros!




Ingredients you'll need:

2 Tomatoes Diced
1 Onion Diced
Corn Tortillas
4 Eggs
Salt
Pepper
Garlic
Beans (Homemade or Med. Can of refried)
Water

Make the sauce first by softening the onions and tomatoes with a little olive oil in a large skillet on medium heat. When tomatoes are softened take your spoon or spatula and smash them. Add water to the pan (about 1 cup). When adding the water make sure you add a little at a time, because you don't want to make it to watery, so if you don't need the whole cup that's OK. After the water then add salt and pepper, I don't have measurements for this, because I just do it by taste. And then a pinch of garlic. Then let simmer for about 8 mins.

While the sauce is simmering, heat a small pan of oil and fry each corn tortilla like you would for a tostada. And heat up beans in a sauce pan (I add a little milk to make them more creamy).

When the tortillas are done, cook over easy or over medium egg. I do one at a time because I'm not that good at flipping them;). When the egg is done, place a tortilla on a plate, put the egg over the tortilla and pour your sauce on top of that and finish the plate off with some beans on the side and you got yourself some quick and easy huevos rancheros! Mmm This makes about 4 servings.
